Delicious and healthy purple colour glutinous rice kuih recipe (Kuih Seri Muka), made using low sugar and with natural purple sweet potato filling in the centre.

♦️(Recipe 食譜) ▶️ Glutinous Rice Layer 糯米層 - Glutinous rice 糯米 320g (soaked 3-4 hours, drain the water) (浸泡3-4小時後濾干水) - Coconut milk 椰漿 200ml - Salt 鹽 1/2 tsp
Steam 25 minutes over high heat. 大火蒸二十五分鐘。
Equally divide into 2 平分成兩份
▶️ Purple Sweet Potato Layer 紫薯泥層 - Purple sweet potato 紫薯 220g - Water 清水 320ml - Caster sugar 細砂糖 30g
Boil 220g purple sweet potato until cooked with 320ml water and extract 200ml purple sweet potato juice.
將220g紫薯放入320ml清水煮至熟,然後提取200ml的紫薯汁。
▶️ Purple Layer 紫色層 - Rice flour 粘米粉 75g - Tapioca flour 木薯粉 35g - Caster sugar 細砂糖 30g - Salt 鹽 1/2 tsp - Purple sweet potato juice 紫薯汁 200ml - Coconut milk 椰漿 100ml
▶️ Tools 工具 Steaming Pan with banana leaf 蒸盤鋪上香蕉葉 (4 x 9 x 3 inches)

1st Layer - Glutinous Rice Layer 第一層 - 糯米層
2nd Layer - Purple Sweet Potato Mash Layer 第二層 - 紫薯泥層
3rd Layer - Glutinous Rice Layer 第三層 - 糯米層
Assemble 1st to 3rd Layers & Steam 10 minutes over low heat. 組裝第一至第三層並用小火蒸十分鐘。
4th Layer - Purple Layer 第四層 - 紫色層
Steam 30 minutes over low heat. 小火蒸三十分鐘。
